Structural Analysis of Chiral Aroma Compounds by the Crystalline Sponge Method
The Crystalline Sponge (CS) Method is a single crystal X-ray structural analysis method that does not require crystallization of samples. In our study, we have shown to be effective in determination of absolute stereochemistry of several aroma compounds by the CS method. In addition, the CS method has an advantage that only microgram amounts of sample are required. This has succeeded in drastically reducing the time and processes required to isolate and determine the structure of components in a complex essential oil. The results are promising for sustainable development of aroma ingredients.
