Poster Presentation at 17th International WEURMAN 2024 - Flavour Research Symposium

Takasago gave a poster presentation at 17th International WEURMAN 2024 - Flavour Research Symposium held on Sep. 24-27, 2024 at Wageningen University, Wageningen, The Netherlands.

This conference established in 1975 and held every three years in different countries in Europe. At this conference, researchers from industry and academia discussed cutting-edge research achievements related to the field of flavour research: chemistry, biology, neurophysiology and psychology.

 

Determination of the Absolute Configurations of Citrus Tricyclic Monoterpenes by the Crystalline Sponge Method

For developing new expansive citrus flavours with innate natural and delicate feeling, we have investigated important odour-active compounds among wide variety of citrus fruits. We discovered unknown compounds has esteric, fruity sweet note. After purification of the target compounds, we determined the structures of them contributing to esteric, fruity sweet note as 3,9-dimethyl-2-oxatricyclo[4.2.1.03,8]nonane and

6a,7-dimethylhexahydro-2H-2,5-methanocyclopenta[b]furan. In addition, we determined the absolute configurations by Crystalline Sponge Method.
