Focus on Japanese citrus fruit
In a 2021 global survey of 21,600 consumers in 27 countries, Japanese citrus flavors are considered the top edgy flavor from over 240 global flavors. It is expected that a wide range of flavors from these will continue to be in demand. By thoroughly analyzing Japanese citrus fruits including kiyomi, hassaku, hyuganatsu, shiranui, amakusa, yuzu, and sudachi to grasp the flavor characteristics of each, we are tackling more faithful creation of their flavors.
